Care and Maintenance
Our carbon steel skillets are pressed and forged using 11 gauge carbon steel plate, and 304 stainless steel for the handles.
Each piece is oxidized with heat. This process adds a protective layer, as well as beautiful, yet somewhat temporary colouration. Each pan is then pre-seasoned with our signature seasoning oil.
We recommend re-seasoning your pan before use to ensure optimal non-stick performance. If food sticks, the pan lacks sufficient seasoning.
Before using your new carbon steel skillet, please apply the following tried and true techniques for seasoning and care. With proper maintenance, it will outshine any Teflon pan, and last many lifetimes.
Wash your pan by hand using warm water. Do not put it in the dishwasher, and avoid using soap.
Gently scrub the pan with a soft brush or non-scratch pad. If there is cooking debris, simmering water in the pan over the stove for 2-4 minutes (just until it reaches a light boil) is usually enough to release most accumulations, then a light brushing under the running water is best.
Once clean, dry over the heat of the stove. Apply a thin coat of seasoning oil.

Seasoning is the accumulation of oils which are baked on to the cooking steel of carbon steel (or cast iron) cookware. Oil should be applied to your clean pan over the stove after each use. When seasoned regularly, your food will not stick, and your pan will not rust.
Pre-heat your oven to 450°F (230°C)
Place skillet in the oven until warm.
Using an oven mit, remove the skillet.
Using paper towel, a natural brush or cloth, sparingly apply oil to the entire pan.
Using a paper towel, rub the oil off of the pan so that only a very thin layer of oil remains.
Place the pan back in the oven, upside down. Leave in for 30 - 60 minutes.
1 or 2 seasonings like this is best before using your new skillet, the first is already done before leaving our shop. If your pan is sufficiently seasoned, your food will not stick.
Soap, acidic food, and prolonged high heat will break down these layers, so season your pan as needed.
